Tonight's Dinner: Beef with Rosemary and Red Potatoes

MEATS & POULTRY from the Best of the Williams-Sonoma Kitchen Library is one of my trusted standbys. Tonight's dinner is a relatively simple but tasty meal which can be prepared in about an hour. (Note: I do find I need to cook this about twice as long as the recipe calls for...) It makes excellent leftovers.

One of my all-time favorite recipes for Roast Chicken and Gravy can be found in MEATS & POULTRY as well. I've found this book to be one of the mainstays of my cooking library.

All the W-S cookbooks are splendid - with the minor problem that every recipe seems to have something wrong. E.g., I made a delicious non-flour chocolate cake of theirs but the first time it was pudding because it said to remove the chocolate from the pan immediately after 40 minutes. . . when, of course, it was still liquid; instead, it needed to solidify in cool air. As long as you know that about them, they are great.

Aup, you're right, I've found a couple goofs like that myself in Williams-Sonoma recipes...for instance, in the Roast Chicken recipe I love in this book, early on they have you "reserve" a tablespoon of thyme leaves for the gravy -- the rest of the thyme goes in the chicken cavity -- yet when you get to the gravy-making stage, they never mention to put the reserved thyme leaves in. :) I've had to add in additional notes like that myself. That is the one area where they don't quite make the level of the ultra-complete Cook's Illustrated recipes. It would be nice if they'd put out new editions with those kinds of errors fixed.

Wouldn't it be nice if we could all meet for dinner? :) :)

Oh yes!! The great conversations, the fun!! You make the main course and I'll do dessert. Let's see, I can leave the office at 5:30 tonight so I'll see you at, uhm, well, I have to catch a plane but you're 3 hours ahead... Oh, yes, it would be great!!!! Something to live for.

I made some very good friends on the Internet in the early '90s...back in the Prodigy days! We are still in close touch and some of us have even vacationed together and stayed in each other's homes (on opposite sides of the country). I have been very blessed in the neat people I've met online, including Missy of Missyisms.

You never know, maybe someday we'll have a bloggers meeting of some kind and have the opportunity to get to know each other more "in person"! It would sure be fun! Best wishes, Laura :)
